Through this site, I would like to introduce vegetarian recipes from all around the world. I always try recipes with different ingredients, so I came up with many other Indian flavored international recipes such as Indo-Italian, Indo-Mexican.I like modern cooking, but would love to keep originality to some recipes. Traditionally, in India, mother used to teach daughter cooking traditional recipes. But in my case, I didn’t know anything about cooking even when I got married. My interest in cooking became more creative since my family prefer home cooked food everyday. Also, everyone needs some excited menu. Repeated recipes make some of us boring over the period of time. That was the another reason I started mixing Indian flavor to international recipes and come up with some excited recipes. I would love to share those recipes with you all and make your everyday menu excited, too.

      You can roll parathas and use wax paper between each rolled parathas to stack all your rolled parathas so that they don’t stick to each other. When you are ready to use again, take out of freezer and do not thaw, bake them immediately.

    Tried to prepare your Quick Chilli paneer but something went wrong. When I fried the paneer after 1/2 an hour marination it melted and did not get the golden color as shown in your video. Could you please tell me what did I do wrong?

      I usually don’t deep fry my paneer. I just saute with little oil. Not sure what went wrong. When you marinate paneer, it gets little soft but even after that it should not melt when you fry. Next time, do not fry, just cook with little oil very lightly and see if that works.

      Usually cream can be extracted from boiled milk. Boil fat milk and then allow it to cool and referigerate, next day, you will see some thick cream on top. For making coconut powder, you can shredd coconut and then allow it to dry under sun or in the oven at lowest heat. Hope this helps. If you have more questions, feel free to ask.

    am a beginner in cooking. i tried your basic egless sponge cake . it didnt come out well. the color of the cake from inside was brown but the cake cake was soft. i used normal vinegar which we use for cooking. should i use white vinegar? and the cake needed more sweetness. could i increase the amount of condensed milk? the cake mixture was a bit tight ?

    could you please tell me where icould be wrong….

    the place where i live i dont get measurement cup…. could you please tell me how many grams of flour makes one cup…..?

    1. Yes, you have to adjust sweetness as per your taste and to make batter consistancy easy to pour, you can add water. White vinegar works for me but I guess other vinegar should work. And also measurements are important when it comes to baking so first invest in those.

      You can try many of my recipes which do not include above ingredients such as sprouted green gram, some lentil recipes(you can omit onion easily), and will sure think about more recipes.

    hi bhavna.. here is south indian “AMBODE” recipe..
    ingredients:
    1)bengal gram/split bengal gram- 2cups
    2)dry red chillies- 2-4 (or according to ur taste)
    3)ginger-1/2 spoon
    4)green chillies- 1 or 2 (optional)
    5)curry leaves- 4-5(finely chopped)
    6)rice flour- 2tbsp
    7)oil to fry
    8)salt to taste
    9)pudina leaves- 1 cup (finely chopped)
    10)onion 2-3cups (finely chopped)

    procedure:
    1) soak the bengal gram in water for about 8hrs.
    2)after soaking for 8hrs, drain the water n grind the bengal gram along with red n green chillies,ginger salt to make a coarse paste.
    3)to this add pudina leaves, curry leaves, coriander leaves,rice flour, onion and mix well. add required amount of salt to taste.
    NOTE: add salt carefully as we’ve already added salt while grinding. and do not add water.
    4)from the paste made (in step 3) make patties. apply little oil to hand, take some amount of the dough prepared, and make a round patties of medium thickness (not very thick not very thin)
    5)add oil in pan n deep fry patties until golden brown..
    delicious ambode ready to eat.
    This ambode will be crunchy outside n chewy inside. but make sure that bengal gram is cooked well while frying
    this is a traditional recipe in karnataka prepared in brahmin’s home during all festivals..

    its called kai(coconut)sasive(mustard seeds)gojju(curry).
    in south india we use more of mustard seeds than jeera for tadka…
    here it goes…
    ingredients
    1)coconut 2-4cups(grated)
    2)mustard seeds 2tbsp
    3)red chillies 3-5(or according to your taste).
    4)vegetable of ur choice. u can use any 1 of the vegetable. goes well with lady’s finger, bell peppers.
    5)onion paste 4-5tbsp.
    6)tamarind juice 1-3tbsp(soak tamarind in hot water for abt 10mins n squeeze to take the juice).
    7)chilly powder,turmeric powder,dhaniya powder-each 1tbsp.
    8)salt to taste.
    9)hing-pinch.
    PROCEDURE:
    1)grind coconut, dry red chillies, mustard seeds in mixie along with tamarind juice and make a nice thick gravy.
    2)in a pan add oil, hing and fry the vegetable of ur choice.
    3)to this add the onion paste and grinded gravy and saute well.
    4)add chilly powder, turmeric powder,dhaniya powder and salt to taste.
    5)add 1/2 to 1 cup water and cook well.
    6)add coriander and serve hot.

    (1) learn English. Focus on grammar. You’ll thank me later.
    (2) purchase some measuring cups and spoons. Use them. Understand that 1 tablespoon is not equal to eyeball apporximately a third of a cup.
    (3) may be some speech therapy would be helpful.
    (4) perhaps take a cooking class. Watch Videos from Manjulas kitchen and vah-re-vah chef. Notice their flawless execution and knowledge of traditional Recipies.
    (5) don’t mess with the original. Who the eff adds buttermilk to Bhel?
    (6) most importantly, take a nutrition class. The English lessons should help you in this class. Understand processed food and for the first time in your life, make an educated decision about what you are feeding your family

    1. What egg replacer did you use? I have posted many with few egg replacer and so far I love condensed milk, flax seeds, sour cream or yogurt, ener-G egg replacer. The only one I do not enjoy anymore is tofu.

        1. With condensed milk, I never failed to make cake so not sure what wrong went with yours. If you follow exact recipe, you can go wrong. You can increase amount of condensed milk without any problem.

    Just one question: In the pizza dough can you substitute almond or soya milk for the cow milk and still get good results?

    1. I haven’t tried but you can use just water to prepare dough and still pizza dough will give you good result.

    1. Once ghee is ready, allow it to rest till solid particles sits at the bottom and then drain out ghee. Hope this make clear.

          1. Very glad to hear that ghee came out good. Now, about katlis, If you make paste and add milk powder, just make sure not to overcook. I do add sometimes milk powder when I make kaju katli since I do not like eating too much cashews due it’s fat and katlis come out perfect. If you overcook, it will be sticky and chewy so just cook till it gets little thicker and then allow it to cool down. When it’s warm or become like dough, ready to make katlis. Hope these tips help.

    or can i just add cashew, sugar , water everything together and just cook it ? will it be same ???

    1. Yes, sometimes if you have small quantity, it is hard to figure out sugar consistancy. So yes, you can add powder once syrup comes to boil and you can also add little bit of ghee once your powder gets mixed well with syrup and you should be fine. After that cook till it get little thicker but make sure not to make too thick. Hope this helps next time.

        1. Actually bura sugar is used in peda but yes, you can try next time with powdered sugar. Hope this will help you.

    i tried your gulab jamun recipe… everything went well…. when i fried the balls they were soft in the begining and became hard after a few min. is it normal…?

    first i fried the balls and kept for few min and then i prepared the sugar syrup .. i added the balls to the hot syrup . by the time the balls became hard….

    i think i made a mistake somewhere here…. could you plz tell me what went wrong?

    should i add the balls to the sugar syrup when they are soft ? and should the sugar syrup be hot?

    1. Yes, big mistake. You have to have syrup ready by the time you start frying Jamuns. You have to drop jamun right from the oil to warm syrup to get great result. Hope this will help you next time.

        1. Which milk powder are you using? If you can’t find good milk powder then I recommend to use Milk mawa for best result.

      I am doubted if you could find this ingredients in India. Now, in India, most flour is with gluten as it’s not separated so you can leave out gluten. In place of egg, you can use other egg substitutes I have listed on website and shared video as well.

      Heat a clean, dry cast iron or heavy duty skillet over medium high heat and add the sesame seeds. Stir frequently until they begin to turn golden brown and then stir constantly. Be careful, sesame seeds burn very easily.
      Once they’re toasted, let them cool a few minutes then add them to a food processor.
      Start by adding 3 tablespoons of olive oil. Process the mixture into a paste, scraping down the sides. Add more olive oil until you reach the desired consistency (*see Note)
      Makes a little less than ¾ cup tahini paste, depending on how much olive oil you use.
      Store the tahini paste in the refrigerator in an airtight jar. Will keep for several months.

    I made black forest cake for my son’s birthday last week. When I freshly made it was spongy but when I kept it in the refrigirator it became hard. I kind of didn’t like it that way.     1. When you bake cake with flax seeds powder or other egg replace, I noticed that they make cake harder when you refrigerate or in some cases even if you do not refrigerate. I usually bake the cake day ahead decorate the same day so I do not have to refrigerate longer and it doesn’t get hard. If you try my recent cake recipes, they won’t get harder. Such as I shared cupcakes and chocolate cake recently, they work great.

        I always bake the cake and cupcakes with condensed milk according to your recipe. I’ve never tried it with any egg replacer or flax seeds. Moreover we don’t get flax seeds here in Europe I guess. And also its difficult to find an egg replacer. I live in Switzerland. Here we get all the things with the French labelling. Sometimes its difficult for me to find some ingredients for a recipe. But thanks to you for sharing such great recipes without egg as we can’t eat cakes and pastries purchased from the market due to egg in them. Thanks a tonn for taking out your time for replying. 🙂

    I’ve seen ur vedio for the recipe of fondant .It seems that it is easy to make it at home rather than buying from the market. But can we use another alternative for glycerine in this because I guess here we cannot find it with vegetable base. And can we use homemade natural colours like colours which we make from fruits and vegetables by squeezing out their juices. Will it be OK to keep the fondant at room temperature for 2 or more weeks with those natural colours.

    1. You can add just little oil in place of Glycerine. I am not sure about the colors. You may want to try it out.

      It is normal to see shine on these cupcakes. If you want to fix it, you can roll cupcakes in powdered sugar and it will absorb oil.

    1. Yes, you can. Store cooked rotis in foil and then Ziploc and refrigerate or freeze.

    1. Roasted Garlic Dipping Sauce Recipe
      Ingredients:

      1 large head roasted garlic*
      3/4 cup extra-virgin olive oil
      1/2 cup good-quality aged balsamic vinegar
      1 tablespoon tamari sauce or soy sauce
      2 teaspoons shredded/grated fresh ginger root
      1/2 teaspoon dark sesame oil
      To make the sauce: Squeeze the cooled roasted garlic cloves out of the skins and place them back in a bowl. Smash the cloves into small bits (leaving some in chunks is perfectly OK). Scrape the mixture into a bowl and stir in the balsamic vinegar, tamari, ginger, sesame oil, and olive oil. May be prepared several days or weeks ahead and refrigerated.

      Bring the sauce to room temperature before serving. Ladle into shallow platters and surround with chunks or slices of good quality, crusty bread.

      Southwest Chipotle Sauce
      Ingredints
      1 cup plain yogurt, recommend European style yogurt, or Mexican crema (or crème fraiche)
      1-2 small chipotles in adobo, seeds removed – adjust to taste based on desired level of spiciness
      1 clove of garlic
      Juice of 1 lime
      Salt to taste
      Instructions

      Combine all the ingredients in the blender or mini-food processor. Mix until you have smooth creamy sauce. Taste and adjust the spice level based on your preference.
      Use immediately or refrigerate until ready to use.
