Instant Lemon Lime Pickle

Pickles are must for Indian Thali. Lemon(Nimbu) pickle(achar) is very popular. This pickle can be hot or sweet and sour. Sometimes I like combination of both so I make sweet, sour and hot lemon pickle. Lemons has already zesty flavor and add red chili for hot and spicy and sugar for sweetness. It is really your preference how you like to prepare your pickle.



Instant Lemon pickle

Ingredients

  • 6 Lemons
  • ¼ cup Red chilly powder-if you don't want your pickle spicy , use paprika powder
  • Salt
  • 1 tsp Turmeric powder
  • 1 tsp cumin seeds
  • A pinch of Asafoetida
  • Oil

Now roast & grind:

  • 1 tsp Fenugreek seeds
  • ½ tsp Asafoetida powder
  • Sugar can be added to make little sweet.

Instructions

  • Wash the lemons and pressure cook it without adding water upto two whistles. once the steam get released, let them get cooled completely and slice the lemons as small pieces. Add the red chilly powder and salt, turmeric powder toss until the lemon quarters get well coated.
  • Meanwhile dry roast all the ingredients given under the list 'to roast and grind', grind as fine powder. Heat enough oil, let splutters the cumin seeds, add immediately to prepared spiced lemon quarters and grounded powder. Add sugar if adding. Cook until they get thickens, turn off the stove.
  • Let them get cool completely and store them in a bottle..Enjoy this home made pickles anytime.
