Ringan Palita or Baingan Katri

Ringan or Baingan(eggplant or brinjal) Palita is basically spicy shallow fried eggplants. Brinjal slices cooked with Indian spice mixture. If you are not a fan of Eggplant, use Zucchini or other similar vegetables.

Eggplant is usually disliked by many people but I totally love all kinds of eggplants from baby eggplants to jumbo ones and prepare many recipes out of them.
Eggplant is a very good source of dietary fiber, vitamin B1 and copper. It is a good source of manganese, vitamin B6, niacin, potassium, folate and vitamin K. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid.

Ingredients

  • 1 Big Eggplant or Aubergine (Motu Ringan)
  • 8-10 Green Chillies
  • 3-4 ” piece Ginger
  • 1 pod Garlic
  • 1 cup mix of Green Garlic (Lilu Lahsan) & Green Dhania(Coriander leaves) if available but for me must. I only prepare this recipe when I have those fresh herbs available.
  • 1 tsp Dry Chilly Powder
  • ¼ tsp Haldi Powder
  • 1 tsp Garam Masala or as per your taste
  • 1 tsp Dry Mango Powder (Amchur) or 1 tsp of lemon/lime juice can be added
  • 2-3 tbsp Besan (Chickpea flour)-optional
  • Oil as required
  • Salt as per taste

Instructions

  • Grind Green chillies, Ginger & Garlic in mixer, then add all dry masala, half amount mix of fresh coriander and garlic, and Besan to green paste. Sprinkle water or add oil and mix everything well.
  • (Besan and water helps to keep masala stick to the eggplant slices, so I follow this method. But some people do not add besan. But I think it also enhances flavor as well.)
  • Now, Cut the eggplant(or aub) 1/4″ thick in round pieces.
  • Rub the Aub slices in this masala paste.
  • Put some oil in flat bottom frying pan & put masala rubbed aub pieces in pan one by one in single layer.
  • Do not stack pieces, Just single layer at a time. Cover the pan.
  • Cook for atleast 5-7 minutes on slow falme, or until done. Turn aub pieces in mid.
  • Check the slices if it is cooked, remove from pan & sprinkle / garnish with green coriander & green garlic.
