Shakkarkand Halwa – Sweet Potato Pudding

Shakkarkand Halwa is eaten during fasting. Sweet potato is low in Sodium, and very low in Saturated Fat and Cholesterol but when cooked with milk and butter, it is very satisfying and stomach filling so that’s the reason sweet potato is consumed widely during fasting.
Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.



Shakkarkand Halwa

Shakkarkand also called shakkariya(in Gujarat) makes great halwa.

Ingredients

  • 3 medium sized sweet potatoes
  • 1 tsp ghee
  • ¾ cup milk
  • 4 tbsp sugar
  • ¼ tsp cardamom (elaichi) powder
  • a few saffron mixed with 1 tbsp milk
  • 2 tbsp chopped mixed nuts (almonds , cashewnuts , pistachios etc.)

Instructions

  • Clean and wash sweet potatoes and pressure-cook for 3 to 4 whistles. Allow the steam to escape before opening.
  • Peel and mash the sweet potatoes and keep aside.
  • Heat the ghee in a non-stick pan, add the mashed sweet potatoes and sauté on a medium flame for 2 to 3 minutes.
  • Add the milk, ½ cup of water, sugar and cardamom powder, mix well and simmer for 1 to 2 minutes, ensuring that the mixture has little liquid remaining and not completely dry.
  • Add the saffron and mixed nuts and mix well.
  • Serve hot.
