Dhokli

Dhoklis are very comfy, easy to prepare, stomach filling, delicious and healthy. Dhoklis are prepared with lots of varieties. My son call it fresh Pasta in spicy curry! I keep changing vegetables in Dhokli and so never get bored of this recipe. Vegetables such as pigeon peas(Tuvar), black eye peas(chawli), Cluster beans(Guvar) or any of your favorite vegetable can be used and also can be prepared with some greens such as Spinach(Palak), Raddish or Turnip(Muli) and the list goes on and on! Guvar Dhokli

The combination of Guvar (Cluster beans) with Dhokli is very uncommon but because of presence of Ajwain(carom seeds) and Garlic it adds flavour to the dhokli. Guvar can be replaced with other vegetables such as spinach, fresh pigeon peas, or your favorite vegetable.

Ingredients

  • For dhokali (tikkis)
  • ¾ cup coarse rice flour (idli rawa)
  • ¼ cup coarse chana daal flour
  • ¼ cup juwar flour
  • 3-4 cloves of garlic crushed
  • 1 tsp ajwain seeds (oregano)
  • ¼ cup curd
  • ½ tsp green chilli ginger paste
  • ½ tsp haldi
  • ½ tsp sugar
  • 5 tsp oil
  • salt as per taste
  • For Gravy
  • 1 cup guwar (cluster beans) cut into pieces
  • 3-4 cloves of garlic crushed
  • 1 tsp ajwain seeds (oregano)
  • 1 tsp green chilli ginger paste
  • 1 tsp haldi
  • 1 tsp coriander-cumin powder
  • 1 tsp sugar
  • 5 tsp oil
  • salt as per taste

Instructions

For Dhoklis :

  • Mix everything for the Dhoklis with adding water slowly.
  • Make soft dough. Roll as much thin as you can with help of dry flour. Cut into very small squater or diamond.
  • Keep it covered while you work on the gravy.

For Gravy :

  • Bring 6-7 cups of water to boil in a big heavy bottom pan on high flame.
  • Add oil and Guwar to it.
  • After it is boiled for 5 minutes, add all the spices.
  • Once it starts boiling again, add small Dhoklis to the boiling water.
  • If you add the tikkis to the cold water it will break. Also make sure to add dhoklis few at a time. Keep stirring and keep adding dhoklis.
  • After all the dhoklis are added, cook it covered on medium to slow flame for 30-40 minutes.
  • Add water the gravy starts to become very dry and thick.
  • You can eat it all by itself (of course with the help of a spoon) or with a roti. Traditionally you add raw groundnut oil to it (Yum!).
  • Alternatively, you can add long beans ( choli ) or papadi in place of Guwar.
