Egg Substitutes

Egg-less cooking/baking is challenging for many of us, specially when it comes to baking. But there are some good egg replacements that can be used. Recently, I have been cooking/baking many recipes that call for eggs without adding any eggs and they come out perfect every time. It took actually years for me to find the perfect egg substitutes for some recipes such as cakes and mostly desserts. It’s been lot of fun for me to experiment in my kitchen.
I get questions many time, why without eggs? There are few reasons people do not consume eggs. Some people are allergic to eggs, some do not like the taste, feel and smell of eggs, or it can be religious matter. It is also good to know some quick easy egg replacements just in case if you run out eggs and have no time to run to the grocery just for eggs… Below are some great substitutions for egg. I keep on updating this post as I learn new substitutes, so be sure to keep visiting whenever you think of cooking/baking without eggs.

Substitute for egg wash –Tofu wash can be used in place of egg wash, To make tofu wash, blend/mix together ¼ cup of silken tofu with 1tsp vegetable oil and set aside for 15 min, use as required.
Simply use oil, dairy/nondairy milk, dairy/nondairy butter. ¼ cup of light corn syrup thinned with very hot water can also be used for glazing.
The fried recipes that calls for egg wash to dip, I prepare the mixture of 1 tbsp corn starch with about 1/4 cup of water or as needed to prepare thin batter and it works well.
Now, the most challenging part was to prepare meringue and the good news is that there are few ways to prepare egg-free meringue.
Below is the video for making meringue from boiled chickpea liquid, I then use to make meringue cookies by stabilizing the meringue with xanthum gum. So next time, be sure to reserve boiled chickpea liquid to try out.

    Also pls post a recipie of Eggless dry fruit cake with caramel syrup and dry fruits soaked in rum….i mean the traditional Christmas dry fruit cake

    1. I haven’t used it so do not want to misguide you here but recommend to follow pack instructions.
