Fresh Fruit Cake

Fruit cakes are my all time favorite whether it is fresh or dry fruit cake. Fresh fruit cake gives fantastic look with healthy choice of all fresh fruits. This cake requires very less time and yet taste delicious and will sure impress crowd with it’s fabulous look for sure. And I will show start to finish Fruit Cake presentation. The best part is that no one will know that this is the eggless Fruit cake. Below is the video to make basic spong cake.

Ingredients

For Cake: Makes 2- 9" round cake

  • 2 cups all purpose Plain flour
  • 1 tin (400gm) Milk maid condensed milk
  • 1 stick (1/2 cup)Â Butter -room temperature
  • 1 cup milk
  • 11/2 tsp Baking powder
  • 11/2 tsp baking soda
  • 2 tsp Vanilla essence
  • 2 tbsp sugar
  • A pinch of salt

For Frosting/Icing

  • 1 big tub of cool whipped -or 4 cups whipped cream
  • 1 cup icing/powdered sugarÂ
  • Fruits of your choice for topping

Instructions

  • Making of Cake
  • Preheat oven to 300F. Grease 2 9" round cake baking tray.
  • Mix butter, condensed milk, sugar, and vanilla essence , beat well using a hand blender.
  • Sieve soda, baking powder and flour thrice so that it will mix well.
  • Add the flour to the butter mixture.
  • Mix slowly using a spatula without letting the air bubbles go down
  • Now add milk to get right consistancy of batter.
  • Pour the batter into the baking tray.
  • Bake for 25-30min or till done. Keep an eye on it.
  • When done, bring both cakes on cake cooling racks. Let them cool down compeletly before decorating.

Preparing Icing:
Believe me or not but this icing is the easiest icing with no hassles.
All I do is fold in powdered/icing sugar slowly with cool whip. Add Vanilla extract and mix. You can see me making this easy frosting in my Black Forest Cake Video.

If you can’t find ready cool whip, buy heavy whipping cream and make sure to whip till it gets thicker. Once cream is whipped well, fold in sugar slowly, add vanillas essence and your icing is ready in no time.

Alternate recipe made with cream chees and cream: Makes nice and thick icing.

Now all hard work is done and fun part starts.

Preparing Fruits

Make slices of Strawberry(you can keep whole if you wish, I kept strawberries whole since they were perfect small size), Kiwi, orange(I use manderin orange segments- If you are mango lover, use slices of mango)Â and we will need only one ring thick slice of pineapple and one cherry. You can have your own innovative idea for decorating but with my style decoration, each and every piece of cake will get same amount of fruits equally…

Now, take one cake and apply icing on top of cake. Place another cake on top of it and cover the whole cake with icing.

Now, arrange fruits on top.

You can sprinkle some powdered sugar on top of fruits or glaze with citrus sugar syrup.

To make Glaze -Bring the 1/2 cup sugar and 1/2 cup juice to a boil and remove from heat. Cool and drizzle over fruits on cake.

Make some borders on edges of cake on top of cake and at bottom around cake.

Your fabulous looking cake is ready. Enjoy!

    Hi bhavana which whipping cream hv u used in fresh fruit cake can u adv

    1. I use ready whipped cream. If you can find only liquid whipping cream, you can whip until it becomes thicker.
