Homemade Indian Ice Creams

A simple formula to make Ice cream with hundreds of flavors! First I make plain Ice cream with just two ingredients – Cream and Condensed Milk. Then I’ll add flavors as per preference. Learn how to make Indian Popular Ice cream recipes. Flavors: Pan, Chikoo (Sapota Fruit), Mango, Badam Anjeer (Almond Fig), Pudina (Mint Chocolate Chip) & Kesar Pista( Pistachio with Saffron), Kaju Draksh(Cashew Raisins)

Ingredients

  • To prepare Plain Ice Cream:
  • Cream 2 Cups (32 tbs)
  • Canned condensed milk 400 Gram (1 can)

FOR PAN FLAVOUR:

  • Paan 1 Large , finely chopped (meetha)
  • Rose syrup 1 Tablespoon

FOR CHIKOO (SAPOTA) FLAVOUR:

  • Chikoo 340 Gram , finely chopped for 1/2 cup and rest pureed with milk
  • Milk 1/4 Cup (4 tbs)
  • Ground cardamom 1/2 Teaspoon

FOR KESAR PISTA (SAFFRON-PISTA) FLAVOUR:

  • Pistachios 1 Cup (16 tbs), finely chopped or coarsely ground
  • Kesar 1/4 Teaspoon , ground
  • Hot milk 3 Tablespoon

FOR AAM (MANGO) FLAVOUR:

  • Mango puree 3/4 Cup (12 tbs)
  • Finely chopped mango 1/2 Cup (8 tbs)

FOR KAJU DRAKSH (CASHEW RAISIN) FLAVOUR:

  • Broken cashew nuts 1/2 Cup (8 tbs)
  • Raisins 1/4 Cup (4 tbs)
  • Half and half/Thick milk 1/4 Cup (4 tbs)
  • Ground cardamom 1/4 Teaspoon

FOR MINT CHOCO CHIP FLAVOUR:

  • Chopped mint 1/2 Cup (8 tbs)
  • Mini chocolate chip 3/4 Cup (12 tbs)
  • Green food color 3 (if desired)
  • FOR BADAM ANJIR (ALMOND-FIG) FLAVOUR:
  • Badam 1/2 Cup (8 tbs) (almond)
  • Fig 6 (dry, anjir)
  • Half and half/Thick milk 1/2 Cup (8 tbs)

Instructions

MAKING:

  • First prepare Plain Ice cream
  • In a frozen container, whip cream until stiffness peaks.
  • Add condensed milk and continue to whip.
  • Pop into freezer and freeze until flavours are ready.

For pan flavour:

  • In a bowl, combine 2 cups of plain ice cream with chopped pan, rose syrup and mix well. Transfer to a container, cover with a lid and pop into freezer for 4-6 hours.

For chikoo (Sapota) flavour:

  • In a bowl, combine 2 cups of plain ice cream with chopped chikoo, chikoo puree, ground cardamom and mix well. Transfer to a container, cover with a lid and pop into freezer for 4-6 hours.

For Kesar Pista (Saffron-pista) flavour:

  • Combine kesar with hot milk and allow to cool completely. In a bowl, combine 2 cups of plain ice cream with pistachios, saffron milk and mix well. Transfer to a container, cover with a lid and pop into freezer for 4-6 hours.

For aam (Mango) flavour:

  • In a bowl, combine 2 cups of plain ice cream with chopped mango, mango puree and mix well. Transfer to a container, cover with a lid and pop into freezer for 4-6 hours.

For Kaju draksh (Cashew raisin) flavour:

  • Heat half and half in a saucepan and stir in cashews and raisins. Cook for 1 1/2 to 2minutes, transfer to a separate bowl and allow to cool. In a bowl, combine 2 cups of plain ice cream with milk mixture and ground cardamom. Transfer to a container, cover with a lid and pop into freezer for 4-6 hours.

For mint choco chip flavour:

  • In a bowl, combine 2 cups of plain ice cream with chocolate chips, mint and green colouring. Transfer to a container, cover with a lid and pop into freezer for 4-6 hours.

For Badam anjir (Almond-fig) flavour:

  • Heat half and half in a saucepan and stir in figs. Cook until soft and allow to soak after turning off heat. In a blender, process soaked figs with milk, almond until well ground. In a bowl, combine 2 cups of plain ice cream with blended mixture. Transfer to a container, cover with a lid and pop into freezer for 4-6 hours.

  • Serve and enjoy!
