Instant Handvo in Pan – Stove Top

This instant handvo is made from Rava(Sooji or semolina) and cooked on stove top in the nonstick pan. So you don’t have to have some special utensils to make this Hanvdo. Very easy, quick and healthy. Can be served with tea or simply eat itself with chutneys.
These days I add 1/4 cup of Besan (chickpea flour) to 1 cup Rava to add protein and more nutrition. You can then adjust the amount of water and other ingredients.

Ingredients

  • 1 cup fine soji (semolina)
  • 1-1/2 cup thick buttermilk or 1 cup yogurt
  • 3 green chillies finely chopped
  • 1 tsp grated ginger (adrak)
  • ½ cup vegetables as per choice finely shredded (bottle gourd(dudhi),carrot, beans, spinach, onion, capsicum, cabbage, etc.)
  • ¼ tsp . baking soda
  • 6 tbsp . oil 3tbsp for batter and 3 tbsp for tadka
  • 1 tsp . cumin coriander powder
  • 1 tsp . mustard seeds
  • Few curry leaves (Mitho Limbdo)-if available
  • 1 tbsp sesame seeds
  • A pinch of turmeric powder
  • salt to taste

Instructions

  • Mix soji, powdered spices, yogurt, ginger, green chili, 3 tbsp oil, vegetable, and add water slowly to prepare batter.
  • Make a thickish batter, adding buttermilk or water accordingly.
  • Keep aside for 30 minutes.
  • Now gently mix in soda. Add soda at last right before cooking. Never add soda ahead of time.
  • Put a med. heavy saucepan or kadai to heat.
  • Put 3 tbsp. oil in pan, add mustard seeds.
  • Allow to splutter. When done add curry leaves, sesame seeds.
  • Pour batter carefully in oil. Spread batter evenly.
  • Cover and allow to cook on very low.
  • When the base turns crisp and golden brown, flip over.
  • Allow other side to become crisp.
  • Serve hot with green chutney or sauce.
  • Repeat with remaining batter if you have some batter left. If usually make big handvo in wide pan.
  • If many are required at a time, use more than one stoves and pans.
  • Or use the paddu tava.(It is a thick iron griddle with cup depressions like muffin trays.)

Batter can be stored for few hours, add soda when required.

    Notes

    I cook on low heat for 25-30 minutes. 15 minutes on each side or till done for best result.
