Left Over Roti Noodles

Left over food is a part of life and it is a good habit to make use of left over and turn into something really exotic that no one will notice left overs!
I prepare roti almost everyday and I do not waste even single roti, anytime I have some rotis left, I keep collecting them in freezer and once I have enough, I prepare either, crunchy Chevda, Noodles, Dhokli or lemon or curd roti for breakfast. All my family member love these quick fixes and eat without any complains, actually I get many compliments when I prepare something out of left over roti..

Ingredients

  • Chapati- 6 cut into thin strips
  • Onion- 1 large finelt sliced
  • Tomato-3 chopped finely
  • Carrot-1 cut into lengthwise
  • Green chilli-2
  • Soy Sauce-1 tblspn
  • Coriander Powder / Malli – 1 tblspn
  • Chilli Powder-1 tsp
  • Turmeric Powder / Manjal Podi-1 tsp
  • Garam Masala Powder-1 tsp
  • Salt to taste
  • Coriander leaves / Cilantro for garnishing
  • Oil – 1 tblspn

Instructions

  • Heat oil in a wok or kadai. Add onions and green chilli and fry for 3 mins.
  • Add carrots and cook for 5 mins till they are half cooked.
  • Add tomatoes..Cook this till it turn mushy, it will take around 5 mins.
  • Season with salt, Add all spice powders and mix well.
  • Add some soy sauce and mix well. Now add in cut up chapatti and mix well.
  • Garnish with cilantro and serve hot or put in lunch box.
