Pudina Chutney – Mint Pesto

Pudina aka Fudina (Mint) – the summer’s coolest herb. Growing mint is easy—sometimes too easy. Learn to plant, grow, and control mint in your garden. Growing mint in containers is usually your best bet.
Mint Chutney is deliciously spicy condiment prepared from fresh mint leaves, coriander leaves, ginger and garlic. I also add fresh garlic chives if I have some in my garden and to increase the quantity of chutney for the crowd, I add Green Bell Pepper as well. Green peas can be used as well. This chutney freezes well.

Ingredients

  • 1 cup mint leaves (pudina)
  • 2 cups fresh coriander leaves
  • ¼ cup Garlic Chives (Lilu Lahsan) or 3-4 cloves of Garlic
  • 2 inch piece of ginger
  • 3 tbsp lime juice
  • ½ green bell pepper or use 1-2 green chili for spicy taste
  • (If you wish to increase the quantity of Chutney green peas can be added as well.
  • 3 tbsp groundnuts , if desired
  • Salt to taste

Instructions

  • Combine all ingredients and blend to a smooth paste. Store in an airtight container and use as required. This chutney freezes well. Use this chutney for chaats, Pakoras(Fritters), Samosa and more.
