Light Fruit Cake with Nuts

Ingredients

vanilla extract

oil

yogurt

sugar

Lemon juice or 1/2 cup Orange Juice

Zest of a Lemon

Water as needed to adjust the consistancy. Takes about 1/2 cup or less

tutti fruity or cake mix with nuts
can be flavored with cardamom or all spice if desired
Instructions
Sift together flour, vanilla custard powder and baking powder & soda.
Beat oil, sugar, yogurt and mix well till sugar dissolved.
Add sifted flour mix to wet mix and mix together well.
Now, add some zest of a lemon and juice of lemon.
Add water as needed to adjust the cake batter. Cake batter should be little thicker compared to cakes made with eggs.
Finally, add dried fruits & nuts and spices if adding. Mix lightly.
Pour this into a greased baking dish.
Bake at 350F in preheated oven for 45 to 60 minutes or till a toothpick or knife inserted comes out clean. Let cool in pan for about 10 minutes.
Remove the cake from the pan and bring on to cooling rack. Cut into slices and serve.
