This flavoured snack is one of my favourites as it is very easy to rustle up for morning breakfast as well as for the evening tea. ... From western India, Poha, made from flattened rice, is an easy-to-cook, very low in fat , high in fibre and nutritious snack. ...This traditional Maharashtrian recipe is made of iron-rich poha. Don't forget to serve it with lemon wedges as it is the vitamin C present ...
Place the poha in a sieva and hold it under running water for a few seconds. Toss well to drain out all excess water and keep aside. Keep 2-3 tbsp of water in it and let it soak.
Heat oil in a non stick pan and add the mustard seeds and cummin seeds.
When the seeds crackle add asafoetida and the curry leaves
Add the onions and saute till the onions turn golden brown. Add all pastes.
Add potatos, turmeric powder, salt, and a littlewater. cover and heat on medium flame till the potatos are cooked.
Add all podered spices.
Add poha, sugar and little more salt to mix.

Also finely chopped tomato and onion can be garnished to make kind of chaat.
