It’s National Soft Taco Day! Come celebrate with some delicious tacos from Bhavna’s Kitchen! Tacos! Tacos! Tacos!
National Soft Taco Day happens each year on the 3rd of October. And National Taco Day is observed annually on October 4. Tacos are loved and eaten by millions each day in either hard or soft shell with a variety of fillings.

Since making Taco is quick and easy, I love to throw almost any kind of left over salad on corn tortillas. Every week, I make Red and Green Salsa, Guacamole to make and plan meal ideas easily.
Lately, I have been enjoying Buffalo Cauliflower Taco and when I don’t have time to make Buffalo cauliflower, I simply use roasted cauliflower with chipotle sauce.

How about making tofu taco? My elder son is a huge fan of taco. Anything leftover like Mexican rice & beans with corn, tofu, cauliflower wings, he loves to take in his lunchbox as well.

Hummus taco is our family favorite. The possibilities are just endless to prepare tacos. Use lentils instead of beans for a change.
I often make Tabouli salad or Tabbouleh is a simple salad of very finely chopped vegetables, lots of fresh parsley and bulgur wheat, all tossed with lime juice and olive oil. When I have some leftover cooked quinoa, I just throw some Quinoa in my Tabouli salad instead of Bulgar wheat.
