 Egg-less cooking/baking is challenging for many of us, specially when it comes to baking. But there are some good egg replacements that can be used. Recently, I have been cooking/baking many recipes that call for eggs without adding any eggs and they come out perfect every time. It took actually years for me to find the perfect egg substitute for some recipes such as cakes and mostly desserts. It’s been lot of fun for me to experiment in my kitchen. 

I get questions many time, why without eggs? There are few reasons people do not consume eggs. Some people are allergic to eggs, some do not like the taste, feel and smell of eggs, or it can be religious matter. It is also good to know some quick & easy egg replacements just in case if you run out eggs and have no time to run to the grocery just for eggs… Below are some great substitutions for egg. I keep on updating this post as I learn new substitutes, so be sure to keep visiting whenever you think of cooking/baking without eggs.

Substitute for egg wash –Tofu wash can be used in place of egg wash, To make tofu wash, blend/mix together ¼ cup of silken tofu with 1tsp vegetable oil and set aside for 15 min, use as required.
Simply use oil, dairy/nondairy milk, dairy/nondairy butter. ¼ cup of light corn syrup thinned with very hot water can also be used for glazing.

Recently, I actually found the way to prepare meringue without egg whites, perfect for vegan diet followers. Below is the video and full post can be found here I also heard or read somewhere about making meringue from boiled chickpea liquid, I still have to try but looks like it works great. So next time, be sure to reserve boiled chickpea liquid to try out.

    is corn starch same as corn flour?
    Also pls post a recipie of Eggless dry fruit cake with caramel syrup and dry fruits soaked in rum….i mean the traditional Christmas dry fruit cake
