Tawa Pav Bhaji Pulao

Cooked rice is sauteed with vegetables and spiced with pav bhaji masala. Tawa pulao is popular Mumbai street food. All the pav bhaji stalls serves this delicious rice called tawa pulao.
I always have Pav Bhaji in my freezer as my kids love them so much. Basically, you can saute veggies with pav bhaji masala and make the pulao or just use left over pav bhaji. One time, I had more rice left than usual. So I thought of giving these two leftovers a try and make something tasty.
It tasted so great, just like Tawa Pulao. If you feel like making Biryani, you can make layer of Pav Bhaji and Rice.
Pav bhaji is very versatile to use for many recipes such as pav bhaji pizza, masala pav buns, and so on. When I prepare Mixed Dal Dosa, I serve it with Bhaji. I also love to add some browned paneer to this recipe.

Leftover Pav Bhaji Pulao

Ingredients

  • For The Rice
  • 1 ½ cups cooked rice
  • 2 tsp ghee
  • ½ tsp cumin seeds (jeera)
  • 3 cloves (laung / lavang)
  • 25 mm (1") piece cinnamon (dalchini)
  • 1 bayleaf (tejpatta)
  • salt to taste
  • To Be Mixed Into A Churi Papad
  • 1 cup roasted and coarsely crushed papad
  • ¼ tsp chilli powder
  • 1 tsp melted ghee
  • Other Ingredients
  • ¾ cup leftover bhaji

Instructions

  • Heat the ghee in a broad non-stick pan, add the cumin seeds, cloves, cinnamon and bayleaf and sauté on a medium flame for few seconds.
  • Add the rice and salt and sauté on a medium flame for 2 minutes, while stirring continuously. Keep aside.
  • How to proceed
    If you want to make spicy pulao, you can just mix rice with Pav Bhaji or you can go little fancy.
    Divide the rice into 2 equal portions.
    Arrange one portion of the rice evenly in a greased 125 mm. (5") round aluminium tin and press it lightly using a back of a spoon.
  • Spread the bhaji evenly over the rice and top with the remaining portion of the rice and press it lightly using a back of a spoon.
  • Turn upside down on a serving plate and serve immediately with churi papad.
