Sweet and Savory Corn Casserole

Casseroles are the ultimate comfort meal. A healthy mixture of savory and sweet, there this nothing better than this hearty treat on any day you need a little extra love on your plate. 

Is all corn made the same?

Not all corn is made the same, from creamed corn, whole kernel corn to canned corn, even frozen corn. There are several corn varieties on the market, and you can make corn casserole dishes with any kind you have at home. Try making your casserole in a cast-iron skillet for a one-pot side dish that cuts back on dishes. 

Depending on the consistency you are looking for, most casserole dish recipes are easily adapted and produce some tasty corn casseroles. The sweet corn flavor with savory bread-like texture is decadent, making this recipe the perfect side dish.

Cream cheese corn casserole

This creamy sweet corn casserole is made with frozen corn and is a quick and easy dish that requires minimal effort. This recipe is creamy and gluten-free. With no thickeners in this holiday side dish is ideal for days when your pantry is a little bare, and you don’t feel like making the grocery store trip.

Cook time: 40 minutes total time, including prep and cooking. 

Ingredients

  • 8oz cream cheese
  • 4 tablespoons butter 
  • 1/3 cup milk
  • 1/2 teaspoon salt 
  • 18oz frozen corn 
  • 1 cup shredded cheese, cheddar, or gouda 
  • Optional: Chopped jalapenos 

Method:

Preheat your oven to 350F. 

In a cast-iron skillet (like this one at Uno Casa), melt the butter and cream cheese over medium heat. Add the milk and stir until all lumps are out and the mixture is creamy. Add the corn, salt, and jalapenos. Sprinkle shredded cheese on top of the casserole mixture and remove it from heat.

Put the skillet into the oven for 20 minutes until bubbling and golden. 

Allow the baked casserole to rest for 5 minutes before serving. 

Cheddar cheese and chives corn casserole

This tasty corn casserole recipe is made with both whole kernel corn and creamed corn. This recipe is as easy as mix and bake. When ready, it is sliceable and can be made ahead of time and kept in the fridge until needed. It is sweet enough to be considered a slightly savory corn pudding.

Cook time: 50 mins Total time with preparation, cooking, and setting. 

Ingredients: 

  • 15oz can of whole kernel corn, drained
  • 15oz can of creamed corn
  • 1 large egg
  • 1/2 cups shredded sharp Cheddar
  • 1 cup yellow cornmeal or jiffy corn mix
  • 1 cup of sour cream
  • 6 tablespoons of unsalted butter, melted
  • 1/4 cup fresh chives, chopped 
  • 1/4 cup brown sugar
  • 2 teaspoons baking soda
  • To taste: Cracked kosher salt and freshly cracked pepper

Method

Preheat oven to 350 degrees Fahrenheit. 

In a bowl, combine all of the casserole ingredients and mix well—season to taste. Pour the mixture into a large oven-safe skillet. 

Bake the corn casserole in the oven for 30 minutes until set in the middle. Remove from the oven and top with additional cheese; place back into the oven for 5 minutes until the cheese has melted on top and is golden brown. Allow cooling before serving or store in the fridge for later. 

Cheese and onion corn casserole 

If you love corn casserole with a little onion and cheese, this is the recipe you never knew you needed. This recipe is ideal for any holiday or event. Prep it ahead of time, with the uncooked batter in your oven dish and stored in the fridge until 30 minutes before you are ready to bake means this meal is fresh and tasty in an instant. 

Cook time: 50 minutes

Ingredients:

  • 1 medium onion, sliced
  • 2 teaspoons of sugar
  • ½ cup green pepper, diced
  • ½ cup melted butter
  • ½ tsp salt
  • 8.5oz box Jiffy Corn Muffin Mix
  • One 15.25 oz can of whole kernel corn, drained
  • One 14.75 oz can of creamed corn
  • 1 cup sour cream
  • 1 cup grated cheddar cheese
  • 3 eggs

Method:

Preheat the oven to 350F. 

In a cast-iron skillet, caramelize the onions in a little sugar and butter over medium heat. Once the onions are soft and caramelized, remove them from the skillet. Set the onions aside. Saute the chopped green peppers in salt until softened. 

In a bowl, mix the remaining ingredients until well combined. Pour the mixture into the skillet or an oven-safe dish. Scatter the caramelized onion over the casserole. Set aside for baking at a later stage, or bake in the oven for 45 minutes. Sprinkle additional shredded cheese on top and bake under the grill for 5 minutes until golden brown on top. 

Slice and enjoy this comfort food.
