Almond Cookies | Nankhatai

This almond cookie known as “NanKhatai” in Indian and very popular. It’s super easy to make. Make mouth melted cookie in no time. This cookie can be made with wheat flour or All purpose flour. I prefer making this cookie with Whole wheat flour. I have shared both options.

Ingredients

  • 1 cup Wheat flour (Chapati flour)
  • ¼ cup Whole wheat flour
  • 1 Tbsp . Rava (Samolina or sooji)
  • ½ cup Unsalted butter (Room Tempreture)
  • 1 Tbsp Gram flour (Besan)
  • 1 Tbsp Crushed almond or your choice of nut
  • ½ cup sugar
  • ½ tsp Cardamon powder
  • A pinch of Nutmeg powder
  • 1 tsp Baking powder

Instructions

  • In the mixing bowl, beat sugar and rooom temprature butter well.Â
  • In another bowl mix all dry ingredients.
  • Now Add dry mixture to the beaten sugar and butter mixture.
  • Mix everything well and foam like dough.
  • Preheat oven at 350 degrees
  • Make small golf size balls and place on cookie baking tray
  • When done place the baking tray into the preheated oven.
  • Let it bake about 12-15mins at 350 degrees.
  • After 10-12 mins, bring oven tempreture to the lowest 170.
  • Bake another about 10-12mins so that naan khatai cooks well inside out
  • After 10-12mins, turn off the oven but do not take out the tray yet. Keep another 20-25 mins inside oven.
  • Take out tray after 20mins or so and let it cool about 10mins.
  • Naan Khatai is ready to eat.
  • I tried another recipe with all purpose flour and came out good, have a look at itÂ
  • Ingredients:
  • 1/2 cup all purpose flour
  • 1/2 cup Wheat flour(Chapati flour)
  • 1 Tbsp. Rava(Samolina or sooji)
  • 1/2 cup Unsalted butter(Room temprature)
  • (Room Tempreture)
  • 1 Tbsp Gram flour(Besan)
  • 1 Tbsp Crushed almond or your choice of nut
  • 1/2 cup sugar
  • 1/2 tsp Cardamon powder
  • A pinch of Nutmeg powder
  • 1 tsp Baking powderÂ
  • For Direction: Follow same method as above
