Cake made without eggs but look like baked with egg because of custard powder, the color of the cake turns out perfect yellow.

When I want to bake this cake faster, I use cupcake tray to almost reduce baking time to half.
This fruitier nuttier and slightly citrusy cake is made without egg, using full fat yogurt to achieve moist fluffy airy texture of the cake. This cake recipe can be converted into basic yellow vanilla sponge cake by simply omitting fruits and nuts.

To prepare fruit cake, you will need following ingredients:
1.5 cups flour
1/4 cup custard powder, I use unsweetened from Indian grocery. The reason to add custard powder is to achieve the color like the cakes baked with egg, that yellow color instead of pale looking cake and it also enhances the flavor.
1.5 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1/2 cup oil
1 cup yogurt
3/4 to 1 cup sugar
1/4 cup Lemon juice or 1/2 cup Orange Juice
1 tsp Zest of a Lemon, optional
Water as needed to adjust the consistancy. Takes about 1/2 cup or less
1 cup tutti fruity or cake mix with nuts
can be flavored with cardamom or all spice if desired

Before, I used to bake cakes using condensed milk and butter but now I prefer oil instead of butter and replace condensed milk with yogurt & sugar to make light & airy cake. The cake made with condensed milk & butter tend to get hard once refrigerated or even at room temperature, may feel dry as well while eating. So this is my go to recipe these days to prepare any flavored cakes.

Light Fruit Cake with Nuts

Ingredients

  • 1.5 cups flour
  • ¼ cup custard powder1.5 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ cup oil
  • 1 cup yogurt
  • ¾ to 1 cup sugar
  • ¼ cup Lemon juice or 1/2 cup Orange Juice
  • 1 tsp Zest of a Lemon optional
  • Water as needed to adjust the consistancy. Takes about 1/2 cup or less

Instructions

  • Sift together flour, vanilla custard powder and baking powder & soda.
  • Beat oil, sugar, yogurt and mix well till sugar dissolved.
  • Add sifted flour mix to wet mix and mix together well.
  • Now, add some zest of a lemon and juice of lemon.
  • Add water as needed to adjust the cake batter. Cake batter should be little thicker compared to cakes made with eggs.
  • Finally, add dried fruits & nuts and spices if adding. Mix lightly.
  • Pour this into a greased baking dish.
  • Bake at 350F in preheated oven for 45 to 60 minutes or till a toothpick or knife inserted comes out clean. Let cool in pan for about 10 minutes.
  • Remove the cake from the pan and bring on to cooling rack. Cut into slices and serve.
