With a flesh that looks like sweet potatoes this yam also has a wonderful flavour.
The large tuber resembles an elephant foot thus the name “Elephant Foot Yam”.

Below is the step by step video instructions to prepare the yummy elephant yam curry known as Suran no Khatu where I grew up.
In some region, this curry is made with dry Pigeon peas, split skin less known as toor or tuvar dal.

- Yam 3 Cup 48 tbs, boiled
- Yogurt 1 Cup 16 tbs
- Kasoori methi 2 Tablespoon
- Ginger paste 1 Teaspoon
- Green chili paste 1 Teaspoon
- Mustard seeds 1 Teaspoon
- Turmeric powder 1 Pinch
- Coriander powder 1 Teaspoon
- Asafoetida 1 Pinch
- Salt 1 Teaspoon to taste
- Sugar 1 Teaspoon to taste
- Whole red dry chili 1 Medium
- Peel and boil yam in a cup of water and drain.
- Into a bowl add the yam, yogurt, ginger paste, green chili paste, turmeric powder, coriander powder, sugar to taste and salt to taste and mash well with a potato masher.
- In a pressure cooker pot heat oil and temper mustard seeds, dry red chili, asafoetida and kasoori methi and stir.
- Add the suvaran mixture and let it simmer for about 2 -3 minutes.
SERVING 5. Serve with rotis or rice.
