Fruit Sandwich is well known as a menu of old style Coffee Shop in Japan. You can use any fruit! As a spread, you can use almond or peanut butter, cream cheese, sweetened whipped cream or avocado and more. Perfect for lunch box as well.
Below are some recipes to get more ideas. First I am going to share the Japanese version as I got the idea from there.
Fruit sandwich recipe:
Serves: 2
Preparation time: 10 minutes
Ingredients
Bread slices- 6
Banana- 2 (sliced)
Pomegranate seeds- 2tbsp
Apple- 1 (grated)
Pineapple ½ cup
Black pepper powder- 1tsp
Sweetened whipped cream- ½ cup
Strawberries- 3-4 (sliced)
Procedure
Cut the brown side of the bread slices. Apply Whipped cream on breads. Place the bread slices on a plate. Now place all the fruits on the bread slice (except strawberries). In short, decorate the bread slices with banana, pomegranate seeds and apple. Cover the decorated bread slices with the bread. Fruit sandwich is ready to eat. Garnish with strawberries slices and serve. You can cut the bread slices into small pieces if you want. Lunchbox

Dot the undersides of the apples with peanut butter “glue” to keep them in place

pear & avocado

Mash ½ ripe avocado in a bowl. Add a squeeze of fresh lemon juice and season to taste with salt and pepper. Spread the avocado evenly on 2 slices of bread. Add a layer of thinly sliced Bosc or Asian pear to one of the slices. Cover with the other slice and press gently to adhere. Swap in pomegranate seeds for the pear, if you like.

strawberry & goat cheese

Split an English muffin and lightly toast the halves. Spread the cut side of the bottom half with softened goat cheese or plain whipped cream cheese. Top with a thin layer of strawberry jam, followed by a layer of thin strawberry slices. Cover with the top half of the muffin, jam side down, and press gently.

honey, almond butter & banana

Spread 2 slices of whole-wheat bread with almond butter or peanut butter. Top 1 bread slice with a drizzle of honey and a layer of banana slices. Cover with the other slice, butter side down, and press gently.

apple, cheddar & peanut butter

Split a focaccia square in half crosswise. Spread the cut side of 1 half with peanut butter. Top with a layer of Cheddar cheese slices and then a layer of thin apple slices. Cover with the other half, cut side down, and press gently.
