These burgers are awesome and are made with only veggies and no soy. The burgers are made from potatoes, carrots, beet root, corn, bell peppers and “indian” spices. These are best made on the stovetop or grilled. Once you make these burgers, you will never buy store bought burgers. Very affordable and versatile. You can easily make vegan and gluten free version as well. Just use gluten free or vegan bread and you are good to go!
Recipe: Vegetable Masala Burger
Ingredients
- 1 large carrot, cubed
- 1 big potato
- 1 beet
- 1 sweet potato
- 1/2 cup bell peppers, diced
- 1/2 cup corn kernels
- 1/2 cup green beans
- 1/2 cup finely chopped onion
- 3-4 tbsp spring onion
- 1/4 cup Coriander leaves
- 4 slices bread or 1 cup bread crumbs or 1 cup rolled oats can be used.
- 2 tbsp olive oil and more for spreading
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1/4 tsp yesllow mustard seed
- 1/2 tsp turmeric (Haldi)
- 1/4 tsp garam masala or to taste
- 1/4 tsp Cumin powder
- 1 tsp Paprika powder
- 1 tsp salt or as per your taste
Instructions
- Start by steaming the potato, sweet potato, beet and carrot. Or you can dice them and cook, try to make the cubes as consistent as possible, so that they will cook evenly in the pan. Over medium high heat, sauté the onion in a little bit of olive oil for about 5 minutes with ginger, garlic, green chilli paste. When onion and other pastes are done, add bell pepper, all whole and powdered spices, corn, green beans and cook for little bit. Add salt. Squeeze lime juice. Turn off the stove. Allow steamed and cooked vegetables to cool down. Mix steamed, cooked vegetables with bread slices and combine into nice mixture. Make burgers and cook on stove top or throw them on grill.
