Fruit Cake

This fruit cake is traditionally prepared on Christmas. I usually do not wait till Christmas but prepare whenever I crave for it. I love it with tea or coffee. I add all kinds of my favorite dry fruits and nuts. My favorite dry fruit is Mango so I do not make this cake without dry mango.

Ingredients

  • 2 tbsp corn starch
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • A pinch of Salt
  • ½ tsp All spice - nutmeg , cloves, cinnamon and cardamom
  • 1 cup Plain white flour - All purpose-Maida
  • ½ cup butter , softened
  • ½ cup Condensed milk
  • 1 tsp Vanilla Extract
  • ¼ cup milk or as needed to adjust consistancy. Water can be used.
  • 1/4-1/2 cup dry fruits and nuts of your choice. I add dates , raisins, cherries, cranberries, mango, almond, pistachio etc.

Instructions

  • Preheat oven at 375F.
  • Sift Corn Starch, flour and baking powder, soda, salt and all spice mix in a medium bowl.
  • In a seperate bowl, blend softened butter and condensed milk. Add Vanilla extract and mix.
  • Now, alternatively add flour and milk and keep blending till all the flour mix and milk is finished. Batter will be little thicker but do not worry. Remember we still have to add dry fruits and nuts but wait till you are ready to pour batter in trays.
  • Now, prepare trays. I use small bread loaf trays. Spray trays with oil and sprinkle little bit of dry flour in trays.
  • Now, fold in dry fruits and nuts but make sure not to overmix.
  • Pour batter in trays and place on middle rack in preheated oven.
  • Bake for about 20-25 minutes or till cake leaves side or inserted toothpick comes out clear.
  • Take out and allow it to rest for 5 minutes and then take out on cooling rack.
  • If you wish you can sprinkle some powdered sugar on top or decorate your way.
