Jowar Pudla or Dhebra – Kanda Methi na Dhebra – Savory Pancakes

This gluten free pancakes are the best and very quick and easy to make. I have actually few similar recipes where I just keep on chaining the flour like Jowar(Milo or sorghum), Bajra(Millte), Jav(Barley) can be used and add little bit of Besan(Chickpea) flour to combine with any of these flours. So for this recipe you can take 1 cup Jowar flour and 1/4 cup of Besan or adjust as per your preference. Then vegetables or greens can be added as per your liking.
Jowar Methi ki Roti is both tasteful and nutritious for everyone. With little variation, you can make roti out of it as well. If you want to make roti, knead dough instead of making batter and you can make rotis with only jowar flour. No need to add even besan(chickpea flour). I call this Dhebras savory healthy pancakes. Infact, making pancakes is much more easier than making rotis. To make Rotis, you will need rolling pin and board if you don’t know how to pat by hand. To make vegan version, omit dairy yogurt and add soy yogurt or simply leave out yogurt.

Ingredients

If you want to knead dough to make rotis, following ingredients are needed

  • 1 cup Jowar ka Atta (white millet flour)
  • 1 cup Fenugreek Leaves (methi), finely chopped
  • ½ cup Onions , chopped
  • ¼ cup Coriander Leaves , chopped
  • 1 Green Chili , finely chopped
  • 2 tsp Oil
  • Salt (to taste)

If you want to prepare batter to make dhebra(pancakes), following ingredients are needed

  • 1 cup Jowar ka Atta (white millet ro sorghum flour)
  • ½ cup Besan (chick pea flour)
  • 1/2-1 cup Fenugreek Leaves (methi), finely chopped
  • ½ cup Onions , chopped
  • ¼ cup Coriander Leaves , chopped (if desired)
  • 1 Green Chili , finely chopped
  • 1 inch piece of ginger (adrak)-grated
  • ½ cup yogurt (dahi)
  • A pinch of turmeric powder
  • 1 tsp coriander cuming powder (jeera dhaniya powder)
  • 2 tsp Oil
  • Salt (to taste)
  • Water as needed to make batter

Instructions

To Make Rotis

  • Sieve the millet flour to weed unwanted particles and then put it in a large bowl.
  • Add all the remaining ingredients to the bowl and make soft dough from them, using lukewarm water.
  • Cover the dough and keep it aside for 10 minutes.
  • Now, divide the dough into 4 equal sections and pat them on a dry, floured surface, to make a nearly round circle of 125 mm.
  • Now, heat the tawa (griddle) and put a round circle on it.
  • Cook from both the sides, till it becomes light brown in color.
  • The roti is ready to be served with your choice of vegetable.

To make Dhebra(Pancakes)

  • In a big bowl, mix first all dry ingredients, flours, spices, salt and mix well.
  • Now add other ingredients, ginger, green chili, yogurt, oil and mix again. Now add water slowly, keep breaking lumps and make smooth lump free batter.
  • Add onion and fenugreek leaves. Mix well.
  • Give it a taste test and if everything good, your batter is ready to make pancakes.
  • If you have time, you can leave this batter on counter for about 30 to 60 minutes. It absorb all the flavor nicely and gives better result if you allow it to rest.
  • You can make pancakes instantly as well if you don't want to wait.
  • Heat up Non-stick tava on medium heat.
  • Pour about 1/4 cup of batter to make small pancakes or the size you want.
  • Smere few drops of oil around the edges of pancakes-optional
  • Bake on both sides till golden brown.
  • Serve hot or cold with Jaggery or chutney and also great with tea...
