Mix Veg Stuffed Paratha

Got some assorted left over veggies? Try making yummy Parathas, stuffed bread. One of my most favorited recipe to prepare when I have little amount of cauliflower, carrot, cabbage left. Veg-stuffed parathas consist of unleavened dough stuffed with a spiced mixture of assorted vegetables, which is rolled out and cooked on a hot tawa with butter or ghee. There are endless possibilities for stuffing such as paneer(cottage cheese)with spinach(palak), only boiled mashed potato can be used, even lentils(daals) are filled sometimes.
